Our 100% Homemade Story
Ramen Ichizu is a passion project—a love letter to Tokyo soul food. Chef Harrison trained in Tokyo under Koitani-san (“JingerBoss”), a legendary ramen master, and has staged with some of the world’s top ramen chefs.
Our signature bowls—Neo-Tokyo Shio and Shoyu—feature a triple soup crafted from locally pasture-raised meats and premium ingredients imported from Japan. We start with reverse-osmosis-filtered water to showcase the natural umami of our bone broth. No chemicals, no MSG—just pure, natural flavor.
Everything is made in-house: noodles, broth, tare, aromatic oils, toppings—even the rendered animal fats. We roll our noodles fresh each day using non-GMO flours from Japan and Korea.
